Secret Recipe Revealed - Rita's Chocolate Cake
This recipe is a favorite of the extended Canfield family. My cousins in Virginia refer to it as RCC. When my cousin got married, a woman named Rita was attended the gathering, and she quickly found out that she was a celebrity. "Not THE Rita?!" was the typical greeting. She thought it quite funny that all these years we had been dedicating this cake to her as she got the recipe from a neighbor! So this recipe reveal is dedicated to Rita's memory, as she passed away a number of years ago . . .
This recipe is all about the frosting, so don't make changes to that part! : )
Rita's Chocolate Cake
1 cup hot coffee
3 cups sifted flour
2 cups sugar
1/2 cup cooking oil
2 tsp. baking soda
pinch of salt
2 tsp. vanilla
1 cup milk
2 egg yolks
4 oz. unsweetened chocolate, melted
Combine ingredients and beat thoroughly. This is a very thin batter. Pour into 12 x 18 inch cake pan. Bake at 350 degrees for 25 minutes.
Frosting
1 lb. confectioner's sugar
1/2 lb. butter (yes, two sticks!)
1 tsp. vanilla
warm milk to make of spreading consistency
Hats off to Rita!

Chris. I bet this is good, but personally do not enjoy chocolate (I know, I AM female....), but will be a great recipe to save to give to others!
Hi Chris:
I will be making this Chocolate Cake. **Looks Like It Is Awesome.** I LOVE CHOCOLATE. Especially a cake made from scratch. Thanks For Sharing. Merry Christmas, Myrna :) :) :)
Hi Chris! Does the cake have a coffee taste? I'll bet it's really rich!
Hi Chris, My favorite is the dark chocolate cake and I haven't made one in a while so I will try this one. I will let you know how I do. :-) Thanks for the recipe.
Hi Chris,
And it sounds easy enough that I will have to try it. I usually don't like to bake; I prefer cheffing up dinner and soups and stews.
Seriously, Joan doesn't like chocolate??? :)

Hi Gwen - Thanks! My father was always a big "mocha" fan, so this was a favorite for him! Hmmm, his 89th birthday is next week . . . maybe I can get my wife to whip this up!
Chris. Your recipe and story are so good. I love these big sheet cakes. Most people eat cake because of the icing so I am glad you included that very buttery recipe.
